THE HISTORY OF LA SERENA The special conditions in Southern Extremadura, with its fertile and shallow soil make the “Real Dehesa de la Serena” (extensive meadows, hills and large stretches of dry pastures) a unique place for breeding merino sheep.
It is difficult to determine precisely when this cheese was first made, but we have knowledge of its existence from the early middle ages. And it is still made in the same way as our ancestors.
The cheese began to acquire importance with the fall in the price of Merino sheep: our ancestors turned their production into the main source of income for domestic economy and due to the surplus, the large hotels and restaurants of the country were the destination of their produce.
Experts and important gourmets currently consider La Serena cheese as one of the finest sheep cheeses in the world, traditional and with a unique taste.
